Attempt at a lighter (by ABV) beer. Kept it in and served it from the Fermzilla. By some weird magic it didn’t require any CO2 for serving (after the original charge up to 15psi)! It held enough pressure to pour until the last drop. How did it maintain pressure? As it was a low gravity brew, I wouldn’t have expected any additional fermentation action generating more CO2. And it didn’t change in taste so no signs of any infection which could generate CO2. So this appears to have been a magical beer!
Brew Notes
Strike water: 20L @ 73°
Mash: 69° (start) – 68° (middle) – 66.5° (end), 45 min mash
Sparge water: 12L @ 83°
Vol in kettle after mash & sparge: 29.5L
SG after mash: 1.035
Aroma Hops stand: added hops flame-out, cool to 90°, stand for 20mins
OG: 1.042
Cooled to 19°
Rehydrated US-05 yeast at 30.4°, cooled to 23° with wort before pitching
Set ferment temp to 18.5°. Pressure starting to build next day and Monday morning fermentation in full swing with pressure up to 15psi. Set pressure to 13psi.
Pressure dropped to 8psi by Thursday. Increased temp to 21°.
Dry hopped on Wed 16 Nov.

Tasting notes
Tastes nice and clean but sometimes comes across as a bit light/watery. Also sometimes I notice it feels a tad overly dry but overall it's quite a drinakable beer. I would probably make a few tweaks if doing again - a slight bit more grain and maybe mash higher to compensate (read something recently about someone making a low alc beer by mashing in high 70's, but I probably wouldn't go quite that high). Also might substitute the Supernova for Crystal to leave a little more sweetness in it for balance.
