I thought the malty base of my previous beer, Hops Harvest 2022, was so good that I kept the grain bill exactly the same and paired it up with a trio of hops pellets – Motueka, Southern Cross and Taiheke.
Brew Notes
Strike temp: 74°
Mash: 67° (start) – 64° (end), 1 hr mash
SG after mash: 1.059
Flameout – added hops, cooled to 94°, hops stand for 20mins to 74°
OG: 1.066
Chilled to 21° and further cooled in fridge below 18°
Pitched re-hydrated yeast at 16° est, set to warm up to 18°
Day 2 – Signs of fermentation starting
Day 3 – Pressure building. Connected keg to pressurise with CO2 off-gassing.

This is a really nice Pale Ale/IPA, very happy with how it came out. Good balance, nice and hoppy. Worth doing again.
